Eggcellent Eggplant Torte
with Eggplant Filling


Second Place 2008 Loomis Eggplant Festival Winner


Cake
2 3/4 cups flour
1/2 cup cocoa
1/2 cup bread crumbs
1/2 cup ritz crackers
5 tsp baking powder
1 Tbs baking soda
2 tsp salt
1 tsp cardamom
1/4 tsp nutmeg
2 sticks butter
1/2 cup shortening
2 cups sugar
6 eggs
1 Tbs vanilla
4 tsp orange zest
6 cups shredded eggplant
1 cup milk
1/4 cup honey

Combine all dry ingredients and set aside.
Beat together butter and sugars, then eggs one at a time. Stir in vanilla, honey, orange peel, and the EGGPLANT! :)
Then alternately add the dry ingredients with the milk into the eggplant mixture.

Pour the batter in a greased and floured pan. I used two 9-in rounds, and then had enough for 6 cupcakes, too. I do this a lot so that I can taste the recipe before I submit it for a contest because often, I just make it up as I go along/never tried to make it before. This was the case here, too. A lot of praying and finger crossing going on. :)

So, bake at 350 degrees for about 40 mins. Use you best judgement for doneness.

While the cake is baking, you can prepare the glaze, filling, & frosting.

Glaze:
You will use this to brush in between the layers of cake before you add filling, and over the top before you decorate/frost.
1/2 cup honey
1 Tbs vanilla
1/8 cup creme de cacao or torani chocolate syrup
1 Tbs pomegranate syrup
1/8 cup water

Filling:
Use this in between the layers of cake.
1/2 of a large roasted eggplant
1/2 of prepared frosting (recipe below)
1 Tbs honey
1/4 ground toasted walnuts (toast in a skillet and then use food processor to grind)

Blend all ingredients in a food processor or blender. Spread between layers.

Frosting:
1 cup melted white chocolate (melt with the milk and shortening in 5 second pulses in microwave)
3 Tbs milk
1 Tbs shortening
4 oz cream cheese
1 stick butter
2-3 cups powdered sugar
1 tsp salt

Combine all ingredients in electric mixer. Start with the butter and cream cheese, then add white chocolate and as much powdered sugar as you want to get to your desired spreading/decorating consistency.

So there you have it. An eggplant cake. It can be done, and it was delicious! :)
