OK, so almost two years ago I was introduced to a dish called "tehdig" or "tahdig"--It's persian cripsy rice... normally topped with a wilted greens, dried lime, and kidney bean mixture called "gormeh sabzi". (The rice is also mixed with a little saffron and sugar, and prepared with lots of butter...) No sabzi here, but I DID make the cripsy rice myself, and I was looking through old pictures and here's how it came out. It might not look like much, but sweet baby jesus, it was delicious...Forgive the blurry-ness... I think I took the pic with a polaroid...
