Vanilla Blackberry Torte!
Here's what to make when you have just been blackberry picking and your roommate happens to give you a huuuge bottle of Mexican vanilla:
Vanilla Blackberry Torte
1 c. butter (room temperature)
2 c. sugar
4 eggs
1/4 c. plus 3 Tbs buttermilk
3 Tbs vanilla
2 tsp. baking soda
1tsp baking powder
1 tsp. cinnamon
1 tsp. ground cloves
1/2 tsp. nutmeg
3 1/2 c. flour
2 c. fresh blackberries, covered in 3 Tbs sugar
Preheat oven to 350 degrees. Butter and flour 2 eight inch cake pans. Cream butter and add sugar, beating until fluffy. Add eggs and buttermilk, beating again. Sift together flour, soda, baking powder, cinnamon, cloves, nutmeg and add in fourths to the creamed mixture, beating well. Fold in berries.
Pour batter in pans and bake 20 to 25 minutes and let cool.
Prepare the filling by adding a little blackberry jam to your favorite buttercream frosting. I also add melted white chocolate and then beat to spreading consistency.

Here is the cake layer with some filling. I also added more jam to the top and some sugared berries.
All ready to frost...
I frosted the cake in buttercream and topped it with more jam. Now that's making use of those berries!

Mexican vanilla is so delicious. I brought a bunch back from my cruise and use it all the time. It's like getting saffron from Spain it's so real and cheap you have to get some.
