Butchery/Sausage Making Classes by Chef Mark Liberman March 8th and 9th


Join Chef Mark Liberman at the Steel Magnolia Kitchen for hands-on butchering lessons and leave with the fruits of your labor. Each class is intentionally small in order to maintain an intimate setting with the chef and animal. Beautiful whole animals are sourced from local farms. Each class ends with tasty sausage snacks and cold Tecate beer in addition to tasting some of the fresh meat you'll extract from the animal.

All students will be supplied with aprons, towels, and a knife during the class. Students will be working in a professional kitchen, so please come prepared by wearing flat shoes and the appropriate attire.

March 8th: HOG BUTCHERY CLASS
In this class you will begin with a 120 pound Berkshire hog and spend the next three hours breaking it down into primal cuts and beyond. Each student gets hands on experience and instruction, leaving with the knowledge base you need to begin your own butchering practices.

Take home portions will include 12+ pounds of delicious pork per student, including recipe suggestions and a reference chart. Class spots are limited to 9 people and available on a first come, first served basis via the online store. This class is 3 hours and takes place from 6pm-9pm.

March 9th: SAUSAGE 101 CLASS
Do you love sausage as much as Chef Liberman does? If so, this class will introduce you to the wonderful world of sausage making. With 10 spots available per class, each student will learn about the techniques and equipment necessary to make quality products. At the end of the class, you will taste what you have created and pack up 10+ pounds of hand made sausage per student, recipes and reference cards included. This class is 3 hours and takes place from 6pm-9pm.

Cancellation Policy: There will be a 50% tuition charge if you cancel within five (5) days of the class you have enrolled in. There will be no refund for cancellations with less than 48 hours notice or for no shows.

Cancellation by Black Sheep Butchery: Black Sheep Butchery reserves the right to cancel any class with reasonable notice given to all participants. If a class is canceled, refunds will be paid in full or you may reschedule attendance in the next available class
