I have also heard tumeric called poor man's saffron.
I would like to actually use annato in a dish--I guess its a Cuban thing?, so I wouldn't use it in place of saffron--because saffron is irreplaceable in my opinion... (and saffron also now completely affordable at Trader Joe's, BTW)... but I would want to invent something completely new... with chicken or shrimp, and of course, a few of my favorite vegetables.
I would love to eat your creation! Mmmmmmm . . . . .
