Eggnogeos

Eggnog butter cookies sandwiched with eggnog buttercream & drizzled with white chocolate.

The buttercream was flavored with eggnog and a little brandy instead of the milk in a normal buttercream frosting recipe. This dough was also surprisingly easy to roll out. I used half butter flavored shortening and half butter to make a softer cookie. For the same reason, I also used half brown sugar and half white. I thought the dough would not turn out at all because the formula I decided to go with contained no eggs. That is good because by the time I was ready to make the peanut butter cookies, I had just enough eggs left! :)
