Peanut Butter Pockets



I used to make these treats about the diameter of a cd in portion size. But this year, I wanted to see how far the recipe would stretch. A double batch still only yields about 25-30. This cookie is soft, cakey, and when you break it open, a little pocket of peanut butter is inside. I stumbled upon the original recipe about eight years ago and I have been making them ever since. This is my sister's favorite out of everything I make. I drizzle the tops of the cookies with chocolate because it gives them an extra elegance and makes them irresistible... obviously unlike me. Ha! The basic cookie recipe was taken and modified from an edition of the book shown below:



The idea to put the PB in the middle? Mine. :)

I saw paula dean make these cookies by using pillsbury tube cookie dough and mint chocolate cookies. She made a sandwich with the mint cookies in the middle and baked. Sounded amazingly easy and tasty.

Mint and PB, together? I don't think I would/could go for that. Mint and chocolate sure, though. I did these with my own two wittle hands. I make little patties, then spoon out the pb, then out a little more dough on top, CRISS CROSS with a fork to close, then bake bake bake. :) Then I finish them with chocolate after they cool. :) Also, this PB dough is too easy to make to use the tubey kind! All ya do is mix butter, pb, brown sugar, egg, vanilla, flour, salt, and baking powder (not soda, kiddos)! Oops... I just gave away the recipe...
