So, here's what I have been doing the past few days with my niece...





The Lebkuchen




The darker ones are more gingerbread.... :)
They both have a lemon glaze on them.

The reason I chose to make the Lebkuchen is because the main sweetener used is honey. And my father farms his own honey. There are ten gorgeous jars above the refrigerator filled to the brim with the golden syrup. I never liked honey before I tasted this kind... :) He was flattered that I wanted to use it in my baking and seemed pretty pleased at the end result!...



Here are more cookies we made (ginger!!)... and some of the sugar cookies we decorated for my mom (who was busy working all day).






I taught my niece (age 7.5) how to make the gingerbread cookies. We measured out everything together... each spice I would introduce and allow her to study in her little hand. She loved the smell of cloves and cinnamon best. She was really interested and I had a lot fun explaning the importance of each ingredient in the cookies and what would happen if we were to leave it out of the recipe. She had never seen molasses before either. She was happy to help add ingredients, but things got really fun for her when it was time to knead in the final bit of flour that the mixer could not handle... and then when it was time to roll the cookies out. We were a great team! :)

How fun! I love that you are teaching your niece to bake. I feel it's important and my daughter (who is 6.5 yo) is learning as well! :)

My husband made cookies today..sugar cookies. We decorate tomorrow.
