Oatmeal Whoopie Pies with Fluffy Peanut Butter Filling
This is going to be my recipe submission for Cooking Light. It's a take on a whoopie pie and a Little Debbie Oatmeal Pie, but the filling is flavored with peanut butter. There is a bit of caramel drizzled on the top. I used a lot of substitutions (brown sugar splenda, light margarine, pumpkin in the recipe to name a few things), but the pies turned out quite nicely. I can't say the same for the pics! :( I am happy with the pies themselves, though. I have a dozen in the refrigerator here at work now if anyone is hungry!
I am going to hold off posting the recipe, as entries in the contest have to be "previously unpublished". If anyone wants it though, email me and I will be happy to send it to you! As I stated, it is much lower in fat and sugar than a traditional cookie-and-icing-at-the-mall-type-creation.

"Finalists will be notified by June 30, 2007. Finalists will prepare their recipes for final judging in a cook-off in Short Hills, NJ or Bedminster, NJ. Any finalist who cannot be reached at the phone number and address provided or who is unable to attend the final judging will forfeit the chance to compete. Names of finalists will be posted on our Web site after July 11, 2007."
I don't even think I will be a finalist because I am sure there are SO MANY entries (thousands) to choose from. But, it sure is fun to be baking, inventing, and sharing. :) I entered two things in the Garlic Festival... I am hoping I get chosen to be a finalist for that since I am sure less people entered (even though I am sure there still were hundreds).
