For the Sushi Party, I made a Green Tea Cake brushed with Lychee Syrup. I iced the cake in Lychee Buttercream and filled it with Lychee Buttercream Jam. I garnished the cake with coconut and various candies. The cupcakes are injected with the Lychee Buttercream Jam as well. There are peanut butter mochi (courtesy of A) all around the bottom. Labour o' love indeed! :)

WOW that is one heckuva impressive looking cake! And it sounds so delicious too!

Did all that lychee stuff from scratch?
For the lychee, I bought a can of it and pureed it in a blender with the heavy cream I used in the frosting. For the filling, I bought a lychee jam. There was also a more concentrated lychee drink I also bought at the Asian market I used in the filling and frosting. The green tea cake I made by brewing green tea and using it where it called for water or other liquid in the recipe. I also split open a tea bag and added it into the dry ingredients. I baked the cake in a water bath to steam it as in the preparation of asian desserts--also added more egg to make it a little more spongey. I was very pleased because I think EVERYONE at the party had at least a taste--except one gluten intolerant person who could not--when normally there are some guests who pass on cake altogther because they don't like cake or are too full.
