Blueberry and Almond Biscotti!


Here is part of the dessert I will be serving at tomorrow night's fundraiser... :) Each serving will be accompanied with some vanilla bean gelato. Since it's so hot outside, I am keeping the desserts light! No buttercream tomorrow. What a shame...



Blueberry and Almond Biscotti

1 1/4 cups almonds, toasted and rough chopped

2 tsp baking powder

1/4 tsp salt

4 cups flour

1 1/2 cups sugar

6 eggs

Contents of a vanilla bean pod

1 tsp almond extract

1 cup dried blueberries



Toast your almonds and give them a rough chop. In a bowl, combine the flour, sugar, baking powder, and salt. Beat the eggs, vanilla, and almond together. Slowly add the flour to the egg mixture and add the blueberries and almonds about halfway through. Finish adding the flour mix.




Form your dough into little logs and bake at a low temp (about 300 degrees) for 30 minutes.




Then take them out of the oven and cut them with a serrated knife... place them back on the baking sheet and into the oven again, ten minutes on each side.




And there you have it... I will be making chocolate and fig cannoli tomorrow for the other part of dessert. Stay tuned...
