I Still Make Cake, Sister...



Make this next time you NEED cake. Ha. It's really good. And it's really good for you.


Mockolate Cake (Sugar-free, low fat, & Gluten FREE!)

121 calories with the whole egg.
67 calories without the yolk.
In the WHOLE recipe. :)

Ingredients:
1/4 cup canned pumpkin
2 Tbs. Cocoa
1 egg or 1 egg white
2 packets of stevia or splenda
2 drops of vanilla extract
Teeny pinch salt



Directions:
Place pumpkin in a microwave-safe bowl and mix with the cocoa and the sweetener.
Add in the egg or the egg white if you are watching your calories. Add a pinch of salt and the vanilla... Mmmm...

Microwave on high for 90 seconds. Let em eat cake.

67 cals; 1.7g fat, 6.4g protein, 13.7g carbohydrates 2.6g sugar (natural)

With egg yolk:
121 cals, 6.2g fat, 9.1g protein, 14.3g carbohydrates, 2.7g sugar (natural)

I made this yesterday, and it's surprisingly filling.

I'm going to add some more Splenda to mine since I used the unsweetened baking cocoa to make it, and it seemed a tiny bit bitter.

Thanks for trying it! No one believes that this is actually pretty good. And, someone else made the same comment to me about an extra pack of splenda. It's true if you haven't been totally sugar free for any length of time. Love it that you like it, though! I will be reviewing a book soon called Sugar Shock, and it is amazing. I am eating more protein and finding out I don't need as much sweet. It's crazy.

I really liked this!!! It would be better with cool whip on top, but I'm a volume eater and LOVED how much you get for 100 calories!!! And it's SuperFood friendly (especially with a little added cinnamon!)
